Butter Roast Chicken

1 whole chicken
1/2 cup butter
1/3 cup lemon juice
1 tablespoon paprika
2 teaspoons salt
1 teaspoon pepper
1 teaspoon brown sugar
1/2 teaspoon crushed dried rosemary
1/8 teaspoon ground nutmeg
1/8 teaspoon cayenne pepper (optional)

Place chicken in a baking pan or roasting dish.

Combine remaining ingredients in a small saucepan; bring to a boil. Remove from heat and pour over chicken.

Bake chicken, uncovered, at 160 degrees C for 30mins per 500g plus 20 mins extra, basting regularly.
