Marshmallows

1 ½ tbs gelatine
100ml cold water
Pinch salt
1 ¼ cups sugar
140ml hot water
Colouring
Flavouring
Toasted Coconut

Place gelatine, cold water and salt in a mixing bowl.

Place sugar and hot water in a sauce pan and bring to boiling point.

Pour over gelatine and stir until gelatine has dissolved.

Beat until thick and white (approx 15 minutes).

Add colouring and flavouring.

Pour into a buttered tray.

Stand until set.

Cut into squares and toss in toasted coconut.
