White Christmas

3 cups rice bubbles
1 cup mixed dried fruit including glace cherries
1 cup icing sugar
1 cup dessicated coconut
3/4 cup milk powder
225g copha (white vegetable shortening)
1 teaspoon vanilla

Melt copha in a saucepan over a medium heat.

Mix dry ingredients together.

Add melted copha and vanilla to dry ingredients and stir well.

Press into a lamington/slice tin or spoon into individual patty pans.

Refrigerate until firm.
