Best Ever Cupcakes

2 eggs
Thickened cream
1 teaspoon vanilla extract
¾ cup white sugar
1 cup self-raising flour, sifted

Crack eggs into a 250ml metric measuring cup then fill to the top with thickened cream. Pour into mixing bowl.

Beat with electric mixer for 1 minute.

Add vanilla and sugar.

Beat for 3 minutes.

Fold flour into mixture until blended.

Place mixture into a muffin tin lined with 12 patty cases.

Bake at 180°C for 15 – 20 minutes.
