1 1/2 cups self-raising flour
1 1/2 cups dessicated coconut
1/2 cup sugar
185g butter, melted
425g can pie apple
Preheat oven to 180°C.
Lightly grease a lamington tin. Line with baking paper, extending by 2cm over each long side.
Combine flour, coconut, sugar, melted butter and egg.
Press half the mixture evenly into the prepared slice tin.
Spread the apple over the base then crumble the remaining slice mixture over the apple.
Bake for 35-40 minutes or until golden brown. Allow slice to cool completely before removing from the tin.
