Garlic Smashed Potatoes

4 washed potatoes
4 heaped teaspoons garlic butter

Preheat oven to 200°C.

Microwave whole potatoes for 8-10 minutes or until soft. Transfer to an oven proof dish.

Cut a cross into the top of each potato, then using the back of a spoon or fork, squash the top so it splays out.

Place a heaped teaspoon of garlic butter on the top of each potato and bake for 10-20 minutes or until crispy on top.
